Ingredient
– 1 ¼ cup whole milk– 2 ¼ teaspoons active dry yeast– ¼ cup unsalted butter thinly sliced– ¼ cup honey– ¾ teaspoon fine sea salt– 1 large egg– 3 ½ cups all-purpose flour plus more for dusting– 2 tablespoons salted butter meltedFor the cinnamon butter:– 1 cup salted butter softened– ½ cup powdered sugar– ⅓ cup honey– 2 ½ teaspoons ground cinnamon
Introduction
Place milk in a microwave-safe container. Heat milk to 115-120°F in 15-second increments. Do not exceed 120°F. Add yeast, mix. Let yeast grow for 5 minutes.
Step 1
Mix honey, salt, and thinly sliced unsalted butter in a large basin. Add milk mixture and whisk. Butter won't melt entirely. Mix in egg. Mix flour with a wooden spoon. Sticky dough.
Step 2
Sprinkle flour on a clean work area and place the dough. To make smooth dough, flour the top and hand-knead for a few minutes. A sticky dough may need flour.
Step 3
Should be, hence soft rolls. Spray a large bowl lightly with cooking spray. Spray the dough by rolling it in the bowl. Protect it with plastic wrap in a warm, dry place.
Step 4
Time to double dimensions: 60–90 minutes. Punch dough to release air. Sprinkle flour on a clean area and place dough. Create a rough rectangle by dusting the top and rolling to ½ inch thickness.

Pizza cutter edges are uneven. Cut dough into rectangles or squares. Roll and cut scrap dough into 12 ½-inch pieces. Prepare parchment-lined baking sheets for dough squares.

Plastic-wrap rolls and let double for 60–90 minutes. Heat the oven to 350°F. Bake top 12-15 minutes till golden. Apply melted butter immediately. Make cinnamon butter while buns bake.

Mix butter, powdered sugar, honey, and cinnamon in a medium bowl. Beat with an electric hand mixer until smooth. Cool rolls slightly and serve warm with cinnamon butter.
