One of the most popular sweet snacks is a mini doughnut muffin topped with chocolate chips.
INGREDIENTS
FOR THE MUFFINS:– 1 cup (120g) all-purpose flour– 1/2 cup (100g) granulated sugar– 1/2 teaspoon baking soda– 1/4 teaspoon salt– 1/2 cup (113g) sour cream– 1/4 cup (56g) unsalted butter, melted and slightly cooled– 1 large egg, lightly beaten– 1 teaspoon vanilla extract– 3/4 cup (133g) mini semisweet chocolate chipFOR THE COATING:– 1/2 cup (113g) unsalted butter, melted– 3/4 cup (150g) granulated sugar– 1 & 1/2 teaspoons ground cinnamon
MAKE MUFFINS:
Preheat oven to 350°F. Grease 24-cup mini muffin pan. Mix flour, sugar, baking soda, and salt in a large bowl. Make a well in the mixture. Set aside.
Step 1
INSTRUCTIONS
Mix sour cream, chilled butter, egg, and vanilla. Add to flour mixture thoroughly. Mix briefly. (Thick batter).
Step 2
Mix in chocolate chips. Each muffin cup should have around a tablespoon of batter. Bake 10-12 minutes until muffins are golden brown and spring back when touched.
Step 3
Let muffins cool in pan for 5 minutes. Transfer the muffins to a wire rack to finish cooling.
Step 4
MAKE COATING:
Put melted butter in a small bowl. In another bowl, mix sugar and cinnamon.
Step 5
Roll a cooled muffin in cinnamon-sugar after dipping in butter. Transfer to parchment or wax paper or a serving platter. Repeat with remaining muffins.
