Banana Cream Cheese Muffins Recipe

Banana Cream Cheese Muffins contain a cream cheese surprise. Make moist banana muffins better with this simple recipe!  

INGREDIENTS

FOR THE CREAM CHEESE FILLING: – 4 ounces (113g) cream cheese, at room temperature – 2 tablespoons granulated sugar – 1/2 teaspoon vanilla extract – 1 egg yolk FOR THE MUFFINS: – 1 & 1/2 cups (180g) all-purpose flour – 1/2 cup (100g) granulated sugar
 – 1/4 cup (50g) packed light brown sugar
 – 1 teaspoon baking powder
 – 1/2 teaspoon baking soda
 – 1/2 teaspoon salt
 – 1/2 cup (113g) unsalted butter, melted and cooled to lukewarm – 1 large egg
 – 1 teaspoon vanilla extract – 3 medium ripe bananas, mashed (about 1 cup) – 1/3 cup (79ml) milk – about 1 cup chopped pecans, optional – sanding sugar, optional

Making Cream Cheese Filling: Preheat oven to 375°F. Prepare 18 standard muffin cups with paper liners or floured cooking spray.   

Step 1 

INSTRUCTIONS

Mix cream cheese, sugar, vanilla, and egg yolk on medium speed with an electric mixer. Refrigerate when making muffin batter.  

Step 2

MAKE MUFFINS: Mix flour, sugar, brown sugar, baking powder, soda, and salt. Make a well in the mixture. Set aside.   

Step 3

Combine butter, milk, egg, and vanilla in a separate basin until well blended. Add to the flour mixture thoroughly and mix until a few flour streaks remain.  

Step 4

Add bananas and stir briefly. Put 2 tablespoons of batter in each muffin cup. Place 1/2 tbsp of cream cheese mixture in the batter center.   

Step 5

Over the cream cheese filling, add 1 tablespoon of the remaining muffin batter.  

Step 6

You can top each muffin with 1/4 to 1/2 teaspoon of chopped nuts and a pinch of sanding sugar.   

Step 7

Bake until a pick inserted into the center comes out clean, 22–26 minutes. Allow pans to cool for 10 minutes before serving.
