Healthy Curried Chicken Salad Recipe

Enjoy my Curried Chicken Salad with tender chicken, creamy mayonnaise, aromatic curry powder, sweet raisins, and crunchy cashews. Ideal for quick, diverse meals!


– ½ cup mayonnaise (110g) – 2 tablespoons lime juice – 2 teaspoons curry powder – ½ teaspoon salt (4g), plus more totaste – ¼ teaspoon ground black pepper – 3 cups cooked chicken chopped or shredded (405g) – ½ cup diced celery (62g) – ½ cup raisins 92g – ¼ cup chopped scallions 15g – ½ cup roasted cashews chopped (72g)


Combine the mayonnaise, lime juice, curry powder, salt, and pepper in a large bowl and whisk until well combined. 

Step 1

Include scallions, chicken, celery, and raisins in the mixture. 

Step 2

Stir until everything is evenly distributed. Cover and place in the refrigerator until ready to serve.

Step 3

A few minutes before serving, mix in the cashews and season with more salt to taste.
