INGREDIENTS
– ½ cup mayonnaise (110g)– 2 tablespoons lime juice– 2 teaspoons curry powder– ½ teaspoon salt (4g), plus more totaste– ¼ teaspoon ground black pepper– 3 cups cooked chicken chopped or shredded (405g)– ½ cup diced celery (62g)– ½ cup raisins 92g– ¼ cup chopped scallions 15g– ½ cup roasted cashews chopped (72g)
INSTRUCTIONS
Combine the mayonnaise, lime juice, curry powder, salt, and pepper in a large bowl and whisk until well combined.
Step 1
Include scallions, chicken, celery, and raisins in the mixture.
