Easy Baked Pancake Muffins Recipe

These baked Pancake Muffins produce pancakes for breakfast or a snack quickly and easily!  


– 2 cups (240g) all-purpose flour – 2 tablespoons (25g) granulated sugar – 2 teaspoons baking powder – 1/4 teaspoon salt – 2 large eggs, lightly beaten – 1 & 1/2 cups (355ml) milk – 2 tablespoons maple syrup – 2 tablespoons (28g) unsalted butter, melted and slightly cooled – 1 teaspoon vanilla extract – toppings: fruit, chocolate chips, nuts, crumbled bacon, etc. – confectioners' sugar, for garnish

Preheat oven to 350°F. Grease 12 regular muffin cups. Put paper liners in the cups. Mix flour, sugar, baking powder, and salt. Create a central well.  

Step 1 


In a separate bowl, mix eggs, milk, maple syrup, butter, and vanilla. Stir into the flour mixture until blended.  

Step 2

Divide batter evenly into muffin cups. Put your favorite toppings on each. Bake muffins 20–25 minutes until sides are browned and a pick inserted into the center comes out clean.  

Step 3

Cool 10 minutes in the pan. Remove the muffins from the pan to cool or serve immediately. Sprinkle confectioners' sugar and add maple syrup.
