INGREDIENTS
For the Sponge Cake:– 1 cup all-purpose flour– 1 teaspoon baking powder– 1/4 teaspoon salt– 4 large eggs, at room temperature– 1 cup granulated sugar– 1 teaspoon vanilla extract– 1/4 cup milkFor the Chantilly Cream:– 2 cups heavy cream, chilled– 1/4 cup powdered sugar– 1 teaspoon vanilla extractFor Decoration (Optional):– Fresh berries (strawberries, raspberries, blueberries)– Chocolate shaving
INSTRUCTIONS
Sponge Cake;- Preheat oven to 350°F (175°C). Prepare a 9-inch round cake pan with butter and flour or parchment. Add flour, baking powder, and salt to a medium bowl. Save.
Step 1
An electric mixer on high speed beats eggs and sugar in a large bowl for 5 minutes until pale and fluffy. Combine egg mixture and vanilla extract.
Step 2
Alternate adding dry ingredients to egg mixture with milk three times. Gentle-mix until mixed. Evenly pour batter into the cake pan.
Step 3
In the preheated oven, bake the cake for 25–30 minutes until a toothpick inserted into the center comes out clean. Transfer the cake to a wire rack after 10 minutes of cooling in the pan.
Step 4
Chantilly Cream:- Beat heavy cream on medium-high speed with an electric mixer in a refrigerated basin until thickened. Add powdered sugar and vanilla essence to cream and whisk until stiff peaks form. Do not overwhip.
Step 5
Assembling the Cake:- A serrated knife should be used to delicately slice the cake horizontally into two even layers after it cools. Place one cake layer on a dish or stand.
Step 6
Spread liberal Chantilly cream on the cake's first layer. Place the second cake layer over the cream. Frost cake top and sides with leftover Chantilly cream.
Step 7
The cake can be topped with fresh berries and chocolate shavings. To blend flavors, refrigerate the cake for at least an hour before serving.
