Coconut Almond Muffins Recipe

Coconut Almond Muffins are a lightly sweet muffin with a lot of great flavours. Great as a treat in the morning or as a snack in the afternoon!
INGREDIENTS
– 2 cups (240g) all-purpose flour
– 3/4 cup (150g) granulated sugar
– 1 & 1/2 teaspoons baking powder
– 1/4 teaspoon salt
– 1/2 cup (113g) unsalted butter, melted and slightly cooled
– 1/2 cup (118ml) milk
– 2 large eggs, lightly beaten
– 1/2 teaspoon vanilla extract
– 1/2 teaspoon almond extract
– 1/2 cup (42g) sweetened shredded coconut
– 1/2 cup (57g) chopped almond
Warm the oven up to 400°F. Line or grease 12 muffin cups that are the usual size.
Step 1
INSTRUCTIONS
The flour, sugar, baking powder, and salt should all be mixed together with a whisk. Make a hole in the middle of the mix. Put away.
Step 2
Put the milk, eggs, vanilla, and almond extract in a different bowl and mix them together.
Step 3
Add to the well in the flour mixture and mix just until everything is mixed together. Add the nuts and coconut and mix well.
Step 4
Use 3 to 4 tablespoons of batter per muffin cup to divide the dough between the cups that have been made.
Step 5
For 14 to 18 minutes, or until the muffins are golden brown and a toothpick stuck in the middle comes out clean.
Step 6
Allow to cool in the pan for ten minutes. After that, move the muffins to a wire rack to cool fully.
