Quick And Easy Blueberry Muffins Recipe

– 2 cups (240g) all-purpose flour – 1/2 cup (100g) granulated sugar – 1/4 cup (50g) firmly packed light brown sugar – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/2 teaspoon salt – 1/2 cup (113g) unsalted butter, melted and cooled – 1/2 cup (118ml) milk – 2 large eggs, lightly beaten – 1 teaspoon vanilla extract – 6 ounces (170g, or about 1 cup) blueberrie – sanding sugar, optional

Warm the oven up to 400°F. 12 standard muffin cups should be lined or greased.  

Step 1 


The flour, sugar, brown sugar, baking powder, baking soda, and salt should all be mixed together. Make a hole in the middle of the mix.  

Step 2

Mix the milk, eggs, sugar, and butter in a different bowl. Put it into the well in the flour mix. Just mix everything together. Add the blueberries slowly and stir.  

Step 3

Pour 3 teaspoons of batter into each muffin cup to fill them 3/4 full. If you want, you can add a pinch or two of sanding sugar to the top of each one.  

Step 4

Give each a pinch or two of sanding sugar on top. When you put a pick in the middle and pull it out clean, the cake is done. Bake for 14 to 18 minutes.  

Step 5

Let the muffins cool in the pan for five to ten minutes before you serve them.
