Cinnamon-apple Scones Recipe

These scones are hard to resist because they have soft baked apples and a delicious cinnamon sugar topping.  

INGREDIENTS

– 4 & 1/2 cups (540g) all-purpose flour – 1/2 cup (50g) granulated sugar – 2 teaspoons baking powder – 1/2 teaspoon baking soda – 1/2 teaspoon salt – 1 & 1/2 cups (339g) cold unsalted butter, cut into 1/4-inch piece – 1 & 1/4 cups plus 2 tablespoons (384ml) buttermilk – 1 tablespoon ground cinnamon – 2 cups peeled, chopped Granny Smith apple – 1 large egg, beaten – 2 tablespoons milk – cinnamon sugar (1/2 cup granulated sugar + 2 tablespoons ground cinnamon)

Preheat oven to 400°F. Set aside 2 baking sheets with parchment or little grease. Mix flour, sugar, baking powder, soda, and salt in a large bowl.

INSTRUCTIONS

Use a pastry blender to cut butter into coarse meal. Add cinnamon and apple pieces. Do not overwork dough.  

Step 2

Add 1 1/4 cups buttermilk. Once incorporated, the dough sticks together. Dough too dry? Add remaining buttermilk.  

Step 3

Place the dough on a lightly floured surface. Pat or roll the dough into two 6-inch, 1-1/2-inch rounds. Each circle should be split in half and then into three triangles. On baking sheets.  

Step 4

Combine beaten egg and milk. Brush egg wash on triangle tops. Dust with cinnamon sugar. Bake till golden brown and hard, 25–30 minutes. Serve now.
