With the fluffiest buttercream icing between two soft and chewy cookies with chocolate chips, M&Ms and sprinkles, these Christmas Sandwich Cookies are colourful.
Ingredient
For the cookies:– 2 ½ cups all-purpose flour– 2 tablespoons cornstarch– 1 teaspoon baking soda– ¾ teaspoon fine sea salt– 1 cup unsalted butter softened– ¾ cup granulated sugar– ¾ cup light brown sugar packed– 2 large eggs– 1 tablespoon vanilla extract– 1 ½ cups holiday M&Ms– ½ cup mini chocolate chips– ½ cup holiday sprinkleFor the filling:– 1 cup unsalted butter softened– 5 cups sifted powdered sugar– Pinch of fine sea salt– 1 tablespoon vanilla extract– 2 tablespoons whole milk– Green gel food coloring– Red gel food coloring
Introduction
Heat the oven to 350°F. Line sheet trays with parchment, set aside. Combine flour, cornflour, baking soda, and salt in a medium bowl; put aside.
Step 1
Cream the butter and granulated and brown sugar in a stand mixer with the paddle attachment for 3 minutes until light and fluffy. Mix in the vanilla after adding the eggs one at a time.
Step 2
Stir the flour mixture into the bowl slowly until incorporated. Scrape sides as needed. Stir in M&Ms and chocolate chips. Add sprinkles and mix.
Step 3
Roll 2 tablespoons of dough into a spherical ball, taller than wide, to minimise spreading. Finish the dough. Bake until edges are softly golden brown and tops are dry, 11-12 minutes.

Do not overbake. Press extra M&Ms, chocolate chips, and sprinkles into the dough after baking for a lovely display. After 10 minutes on the sheet tray,

transfer to a wire rack to finish cooling. Make filling and bake cookies. In a stand mixer with paddle attachment, mix butter until smooth. Slowly add powdered sugar until mixed.
Step 6
Add milk, vanilla, and salt. Stir and beat on medium-high for 3 minutes until frothy. Frost 3 dishes evenly. Blend red and green food colouring in separate dishes till desired hue.
Step 7
One bowl left. Cut three frosting bags. Each colour is dabbed on half the biscuit bottoms. Place another cookie on top gently to sandwich. Now serve!
