Caramelized Banana Bread With Brown Butter Glaze Recipe

This quick bread is called Caramelized Banana Bread with Brown Butter Glaze, and it tastes great!  

INGREDIENTS

FOR THE BREAD: – 3 tablespoons unsalted butter – 3/4 cup packed dark brown sugar – 3 medium ripe bananas, sliced – 2 cups all-purpose flour – 3/4 teaspoon baking soda – 1/2 teaspoon salt – 1/2 cup buttermilk – 3 tablespoons canola oil – 2 tablespoons rum – 2 large egg FOR THE GLAZE: – 1 tablespoon unsalted butter – 1/3 cup confectioners' sugar – 2 teaspoons half-and-half

TO MAKE BREAD: Preheat oven to 350°. Grease 9"x5" loaf pan. Add butter to a skillet. Medium-high heat melt. Cook brown sugar and bananas for 4 minutes, stirring regularly.

Stop cooking. Let cool 10 minutes. Place cooled banana mixture in a large bowl. Beat until smooth with a medium-speed electric mixer.  

Step 2

Mix flour, baking soda, and salt. Set aside. Mix buttermilk, canola oil, rum, and eggs in a large bowl.  

Step 3

Alternate buttermilk and flour mixtures into the banana mixture in 3 or 4 portions. Just blend.  

Step 4

Pour batter into pan. Bake 1 hour or until a center pick reveals moist crumbs. Ten minutes on wire rack, cool bread in pan. Cool bread on a wire rack after removing from pan.  

Step 5

MAKE GLAZE: Add butter to a small pot. Start browning over medium-high heat.  

Step 6

Remove butter from heat. Add confectioners' sugar and half-and-half. Whisk smooth. Apply glaze to bread. Stand until glazing sets.
