For the Crust: – 1 ½ cups graham cracker crumb – 5 tablespoons unsalted butter, melted – ¼ cup granulated sugar For the Filling: – 1 can (14 ounces) sweetened condensed milk – ½ cup key lime juice (freshly squeezed if possible) – 2 teaspoons finely grated lime zest – 3 large egg yolk For the Topping: – Whipped cream – Lime slices or zest for garnish


Preheat the oven to 350°F (175°C) and line a mini muffin tray with paper liners.

Step 1

Crust: Mix graham cracker crumbs, melted butter, and granulated sugar in a medium basin until it resembles wet sand. Press a tablespoon of mixture into each muffin cup to form a crust.

Place the muffin tin in the preheated oven and bake the crusts for 5-7 minutes until set and gently brown. Let cool gently after removing from the oven.

Prepare Filling: Mix the sweetened condensed milk, key lime juice, zest, and egg yolks in another bowl until smooth.

Fill Crusts: Spoon or ladle filling evenly into each muffin cup on top of the cooled crusts, almost to the top.

Return the muffin tin to the oven and bake the mini pies for 10-12 minutes until the filling is firm but slightly jiggly in the center.

Cool and chill: Let the tiny pies cool completely at room temperature after baking. Refrigerate them for at least an hour to cold and set.
