Best BBQ Chicken Kabobs Recipe

Juicy, tender meat, sweet marinade, and fresh pineapple chunks make BBQ Chicken Kabobs the ultimate barbecue meal. This light and filling meal is excellent for summer BBQs, camping, and potlucks. 

INGREDIENTS

– 1cupteriyaki sauce – 1/2cupbbq saucehomemade or store-bought – 1/4cupAsian sweet chili sauce – 4clovesgarlicminced – 1tablespoonfreshly grated ginger – 1tablespoonlime juice – 1teaspoonlime zest – 2poundschicken breastsboneless and skinless - cut into 1-inch chunk – 2cupsfresh pineapple chunksthe size of the chicken chunk – 1red bell peppercut into 1 1/2-inch piece – 1red onioncut into 1 1/2-inch piece – 2tablespoonscanola oilor vegetable oil – Kosher salt and freshly ground black pepperto taste

INSTRUCTIONS

Mix barbecue sauce, teriyaki sauce, lime juice, zest, garlic, and ginger in a medium bowl. Stir mixture and save 1/4 cup.

Step 1

Place the chicken in a large Ziploc bag with the remaining ingredients and marinate for at least 2 hours or overnight, rotating regularly.

Step 2

Remove chicken from marinade and drain before grilling. Skewer chicken, pineapple, bell pepper, and onion.

Step 3

Rub with canola oil and salt and pepper. Preheat the outside grill or stovetop grill pan to medium heat.

Step 4

Grill the skewers for 10–12 minutes, flipping occasionally. A 165-degree F internal temperature indicates complete chicken cooking.

Step 5

Mix chili sauce with reserved marinade. Brush the mixture on the skewers and fry for 1-2 minutes. With Asian chili sauce mixture on side.
