Berry Cheesecake Muffins Recipe

Behold, these Berry Cheesecake Muffins conceal a delightful cream cheese surprise within their interior!  

INGREDIENTS

FOR THE CRUMB TOPPING: – 1/4 cup (30g) all-purpose flour – 2 tablespoons (25g) firmly packed light brown sugar – 1/4 teaspoon ground cinnamon – pinch of salt – 1 tablespoon unsalted butter, melted FOR THE CHEESECAKE FILLING: – 4 ounces (113g) cream cheese, at room temperature – 2 tablespoons (25g) granulated sugar – 1/2 teaspoon vanilla extract – 1 egg yolk FOR THE MUFFINS: – 1 & 3/4 cups (210g) all-purpose flour – 1/2 cup (100g) granulated sugar – 1/4 cup (50g) firmly packed light brown sugar – 2 teaspoons baking powder – 1/4 teaspoon salt – 1/3 cup (75g) unsalted butter, melted and slightly cooled – 1/3 cup (78ml) milk – 2 large egg – 1 teaspoon vanilla extract – 1 cup assorted berries*

TO TOPPING CRUMB: Mix flour, brown sugar, cinnamon, and salt in a small bowl.

INSTRUCTIONS

Mix in butter until all ingredients are moistened. Set aside. Especially warm kitchens may require refrigerating the topping.  

Step 2

Making the cheesecake filling: Mix the cream cheese, sugar, vanilla, and egg yolk with an electric mixer on medium speed until smooth. Refrigerate when making muffins.  

Step 3

MAKE MUFFINS: Preheat oven to 375°F. Paper-line 12 standard muffin cups. Mix flour, sugar, brown sugar, baking powder, and salt. Create a central we

In a separate bowl, mix chilled butter, milk, eggs, and vanilla. Add to the flour mixture's center well. Mix until a few flour streaks remain.  

Step 5

Mix in berries. Fill each muffin cup with 2 tablespoons of batter. Spread batter to the cups' sides using a spoon or tiny spatula.  

Step 6

The muffin cups should have around 1/2 spoonful of cheesecake filling each. Filling should be in the center of muffin batter.  

Step 7

Cover each muffin with a scant tablespoon of batter. Top muffins with crumb topping.  

Step 8

Bake the muffins 20–24 minutes until the tops are golden brown and a pick inserted into the center comes out clean.  

Step 9

Cool muffins in pans on wire rack for 10 minutes. Remove the muffins from the pan to cool on a wire rack.
