Chocolate Chip Zucchini Muffins Recipe

This recipe for Chocolate Chip Zucchini Muffins takes zucchini muffins to the next level by adding chocolate chips.  


– 3/4 cup (90g) all-purpose flour – 1/2 cup (100g) firmly packed light brown sugar – 1/4 teaspoon baking powder – 1/4 teaspoon baking soda – 1/4 teaspoon ground cinnamon – 1/4 teaspoon salt – 5 tablespoons (70g) unsalted butter, melted and slightly cooled – 1 large egg – 1 cup finely shredded zucchini, well drained – 1/2 to 3/4 cup (85 to 127g) semisweet chocolate chip

Warm the oven up to 375°F. You can grease the muffin cups or line them with paper liners for 6 regular muffins.  

Step 1 


The flour, brown sugar, baking powder, baking soda, cinnamon, and salt should all be mixed together with a whisk. Make a hole in the middle of the mix.  

Step 2

Combine egg and cooled butter. Mix until everything is included in the flour mixture well. Mix in chocolate chips and veggies.  

Step 3

You should use about 3 tablespoons of batter per muffin cup, which is enough to fill each one about 3/4 of the way to the top.

Step 4

A clean pick in the middle after 20–25 minutes of baking indicates doneness. Let the muffins cool completely on a wire rack.
