The Best Ambrosia Muffins Recipe

These great Ambrosia Muffins are made with coconut, pineapple, cherries, oranges, nuts, and coconut.  

INGREDIENTS

FOR THE TOPPING: – 2/3 cup all-purpose flour – 2/3 cup firmly packed light brown sugar – 1/4 cup chopped pecan – 1/4 cup sweetened shredded coconut – 1/2 teaspoon orange zest – 1/2 teaspoon salt – 6 tablespoons unsalted butter, softened FOR THE MUFFINS: – 2 & 1/2 cups all-purpose flour – 1/2 cup granulated sugar – 1/2 cup firmly packed light brown sugar – 1 tablespoon baking powder – 1 tablespoon orange zest – 1 teaspoon salt – 1 & 1/3 cups unsweetened coconut milk – 1 8-ounce can crushed pineapple, drained – 1/3 cup unsalted butter, melted and cooled – 2 large eggs, lightly beaten – 1 cup dried tart cherrie

MAKE TOPPING: Mix flour, brown sugar, pecans, coconut, orange zest, and salt.

INSTRUCTIONS

Add butter and stir with a fork or fingertips until crumbs form. Store in the fridge while making muffins.  

Step 2

MAKE MUFFINS: Preheat oven to 350°F. Paper-line 18 standard muffin cups. If you don't use liners, oil muffin cups.  

Step 3

Mix flour, sugar, brown sugar, baking powder, orange zest, and salt. Set aside.  

Step 4

In a separate bowl, mix coconut milk, pineapple, butter, and eggs. Stir into the flour mixture until blended. Mix in cherries.  

Step 5

Fill each muffin cup two-thirds filled with 3 teaspoons of batter. Top muffins evenly with topping.  

Step 6

Bake 15–18 minutes until a pick inserted into the centre comes out clean. Allow pans to cool for 10 minutes. Transfer the muffins to a wire rack to finish cooling.
