Got overripe bananas? Instead of banana bread, make these light, fluffy 20-Minute Banana Fritters for dipping in warm caramel sauce.
INGREDIENTS
– Vegetable oil, for frying– 3 very ripe, darkly-speckled banana– 2 large egg– 1/4 cup sour cream– 4 Tablespoons unsalted butter, melted– 1 1/2 teaspoons vanilla extract– 2 cups all-purpose flour– 1/4 cup sugar– 1/2 teaspoon baking soda– 1/2 teaspoon ground cinnamon– 1/2 teaspoon kosher salt– Confectioners’ sugar, for serving– Caramel sauce, for serving
INSTRUCTIONS
In a large heavy-bottomed stock pot over medium heat, add 4 inches of oil. Side-mount the deep-fry thermometer. Line a big plate with paper towels.
Step 1
Mix mashed bananas, eggs, sour cream, melted butter, and vanilla in a medium basin. Mix flour, sugar, baking soda, cinnamon, and salt in a medium basin.
Step 2
Add wet ingredients to dry and mix until incorporated. (Stiff batter) Add heaping 1-tablespoon scoops of dough to 325°F oil with a tiny ice cream scoop or two spoons. Use several scoops of dough to fill the pot without overcrowding.
Step 3
Fry the fritters for 3–4 minutes, flipping occasionally, until golden brown. Transfer the fritters to the paper towel-lined dish with a slotted spoon.
Step 4
Continue frying the remaining dough, returning the oil to 325°F between batches. Sprinkle confectioners' sugar on banana fritters before serving.
