This Broccoli Cheese Casserole with Ritz Crackers is the best way to eat broccoli. This holiday favourite recipe has roasted broccoli in a homemade cheese sauce with way too many buttery, crisp Ritz crackers on top.

– 1 lb. (about 6 cups) broccoli florets, about 3-4 small head – 3 Tablespoons olive oil – Kosher salt and pepper – 4 Tablespoons unsalted butter – 4 Tablespoons flour – 1 ½ cups warm milk, 2% or whole – ½ teaspoon garlic powder – ¼ teaspoons cayenne pepper – Salt and pepper to taste – 1 ½ cups shredded cheddar cheese – 36 Ritz crackers (about 1 1/2 sleeves) – 1/4 cup melted butter

Prep. Warm the oven up to 425 degrees. A 9-by-13-inch baking dish should be greased. Add salt to the broccoli. Place the broccoli on a half-sheet pan.

Pour olive oil over the sprouts and toss them around to coat them. Add pepper and salt. Check a floret for seasoning by biting into it; if it needs more salt, add it.

Warm up the broccoli. Put the broccoli in the oven and roast it for 14 to 16 minutes, or until the ends are browned and the florets get soft. Take it out of the oven and turn down the heat to 375 degrees.

Put together the cheese sauce. Make the cheese sauce while the broccoli cooks. In a medium pot over medium heat, melt the 4 tablespoons of butter.

Add the flour and mix it in with a whisk until it's smooth. For about one minute, cook until it starts to bubble. Add the milk slowly while mixing all the time to mix.

Things might look a little lumpy at first, but keep whisking. The mix will get smooth and thick as it cooks. Lower the heat and then add the pepper and garlic powder.

Add salt and pepper to taste. Mix the cheese in until it melts. Take it off the heat. Make the Ritz cracker butter. Place the Ritz crackers in a Ziploc bag or on a tray.

Then, use a rolling pin to cut them up into smaller pieces. Put the ¼ cup of melted butter on top and mix it in well. Get the dish ready. Toast the broccoli and then spread it out on the baking dish's bottom.

Add the cheese sauce and mix it in so that all the florets are covered. Add the cracker pieces on top.

Bake. Put the dish in the oven for 16 to 20 minutes, or until the crackers are golden and the cheese sauce starts to bubble. After 15 minutes, serve after letting it cool.
