Peppermint Patty Stuffed Chocolate Cookies Recipe

INGREDIENTS 

SERVINGS: 18 COOKIES – 1 and 1/3 cups all-purpose flour (spooned & leveled) – 1/3 cup unsweetened cocoa powder – 1/2 teaspoon baking soda – 1/4 teaspoon salt – 1/2 cup unsalted butter, softened – 1/2 cup light brown sugar – 1/2 cup granulated sugar – 1 large egg – 1 teaspoon vanilla extract – 16-18 miniature peppermint patties unwrapped

INSTRUCTIONS

Mix flour, cocoa powder, baking soda, and salt in a large bowl. Set aside.

Mix butter, brown sugar, and granulated sugar in a stand mixer bowl with the paddle attachment or a large bowl with a handheld mixer until smooth. Scrape bowl sides to mix egg and vanilla.

Slowly mix dry and wet ingredients.Cover and chill dough 30 minutes.Preheat oven to 350°F. Arrange two large baking sheets with parchment.

Remove the dough from the fridge and place 2-2.5 tablespoon pieces on the baking sheet.Fold each dough piece around a peppermint patty in the center.

Baking at 350°F for 10-12 minutes. Remove from oven, cool 10 minutes on baking sheet, finish on wire rack.
