Mini Egg Cookies are big, soft, chewy cookies that are full of tasty chocolate egg pieces. These little egg cookies from Cadbury are both cute and tasty.

– 2 cups all purpose flour– ¾ teaspoon baking soda– ½ teaspoon salt– 12 Tablespoons (1 ½ sticks) unsalted butter, melted and cooled– 1 cup packed light brown sugar– ½ cup granulated sugar– 1 large egg– 1 egg yolk– 2 teaspoons vanilla extract– 1 ½ cups mini eggs, such as Cadbury, partially chopped– ½ cup chopped walnuts (optional)

Heat the oven to 325.
Prepare pans. Prepare 2 baking sheets with parchment or silicone mats.

Mix flour, baking soda, and salt in a medium bowl.
Beat butter and sugars on medium in a stand mixer for 1-2 minutes until smooth.

Scrape the bowl as needed and beat in the egg, yolk, and vanilla.
Mix the flour mixture on low speed until barely incorporated.
Add 1 cup tiny eggs and walnuts, if using.

Scoop heaping Tablespoon-sized balls onto parchment-lined baking sheets, allowing at least 2 inches between them.

Bake 11-13 minutes until the edges are set but the centres are soft and fluffy. Once out of the oven, gently press the remaining small eggs on top.

The cookies should cool on the baking sheet for 5-7 minutes before moving to a wire rack to finish cooling.
