Lemon Cake Mix Cookies Recipe

– 1 15.25 oz lemon cake mix – ⅓ cup (79 ml) oil or melted butter – 2 large eggs (US), room temperature – 1 lemon (zest and juice) – ¼ cup (50 g) granulated sugar – ¼ cup (30 g) powdered sugar

Combine the cake mix, eggs, and oil in a large mixing basin and whisk or beat until well blended.

Zest the whole lemon into the lemon cake batter. One tablespoon (15 ml) lemon juice. Blend well.

Cover and chill the cake mix for 30-60 minutes until the lemon cake cookie dough forms balls. Sticky dough is expected.

The oven should be preheated to 350 F (177 C). Using parchment paper, line two cookie sheets.

Scoop lemon cake mix cookie dough into granulated sugar with a tablespoon. Roll lemon cookie dough in sugar. Powder-sugar-roll cookie dough.

Place the lemon cake mix cookies on the baking sheet. Bake for 11-13 minutes or until the edges of the cookies are set.
