Key Lime Cookies Recipe

Graham cracker-filled Key Lime Cookies are tender. The key lime glaze and graham cracker crumbs provide sweetness and acidity. Lime cookies are refreshing and shareable.

Key Lime Cookie – ¾ cup (150 g) granulated sugar – 2 key lime – 1 cup (226 g) unsalted butter, room temperature – ½ cup (50 g) finely crushed graham crackers (about 3 sheets of graham crackers) – 1 large egg (US), room temperature – 2 cups (240 g) all purpose flour – ¼ tsp salt Key Lime Glaze – 1½ cups (180 g) powdered sugar – 2-3 tbsp (30-45 ml) key lime juice – 2-3 tbsp finely crushed graham crackers for topping

Remove the zest from two key limes and place it immediately into the granulated sugar in a large mixing basin.

Beat room-temperature butter and lime sugar until blended. It takes 3-4 minutes on medium speed.

Mix egg and coarsely crushed graham crackers on low until smooth. Add flour and salt to wet ingredients and stir. Cover dough and refrigerate 30 minutes.

Preheat the oven to 350 F (177 C) as the cookies chill. Parchment two big baking sheets.

Place 1 spoonful (15 ml) lime cookie dough on the baking sheet. Baking key lime cookies takes 12-14 minutes.

Mix 2 tbsp (30 ml) key lime juice with 1 ½ cups (180 g) powdered sugar to create a lime glaze for cookies. Add 1 tablespoon (15 ml) for a thinner icing.

Drizzle the lime glaze over each key lime biscuit. Graham crackers crumbled and extra lime zest on top, if desired.
