Now is the time for eggs of all kinds: coloured, spotted, stuffed, and deviled! A standard recipe is spiced up with lots of crispy bacon and jalapenos in these Jalapeno Popper Deviled Eggs.

– 12 egg – 1/3 cup mayonnaise – 2 ounces cream cheese, softened – 1 Tablespoon white vinegar – 1 teaspoon brown sugar – Salt and pepper – 3 jalapeno – 2 green onions, chopped – 6 slices bacon, cooked and crumbled

Making hardboiled eggs:  Single-layer eggs in a big pot. Cover with 2" cold water. Bring to a boil on high.

Remove from heat, cover, and cook eggs for 10-12 minutes. To check doneness, I sacrifice one egg at 10 minutes.

Remove an egg with a slotted spoon, crack, peel and slice to check for doneness.

Remove eggs from pot and place in cold water. Cracking the eggs all over and running them under water makes peeling easier.

Deviled eggs:  Cut the eggs in half and put the yolks in a bowl. Mash mayonnaise and cream cheese in the bowl to eliminate most lumps.

Add vinegar and brown sugar. Add salt and pepper to taste. Add a seeded and diced jalapeño to the egg filling. Stir in one finely chopped green onion to the filling.

Step 6

Divide the filling evenly among the eggs using a tiny cookie scoop or spoon. Slice the remaining two jalapenos.

Step 7

Seed if desired. Put a jalapeño in each egg half, then crumble bacon and slice green onion. Refrigerate until serving time.
