– 1 cup almond flour – 1/4 cup coconut flour – 1/4 cup arrowroot powder – 1 teaspoon baking powder – 1/4 teaspoon salt – 1/4 cup coconut oil, melted – 1/4 cup honey or maple syrup – 3 egg – 1 teaspoon vanilla extract – 1/2 cup unsweetened almond milk – 1 cup fresh raspberries (plus extra for garnish) – Sliced almonds, for topping

Heat the oven to 350°F (175°C). Set aside a 9-inch coconut oil-greased round cake pan. Mix almond flour, coconut flour, arrowroot powder, baking powder, and salt in a large bowl.

Step 1

Mix ingredients well for equal distribution. Mix the melted coconut oil, honey or maple syrup, eggs, vanilla extract, and almond milk in a separate dish until smooth.

Step 2

Transfer the wet components to the dry ingredients and whisk gently until a smooth batter emerges. Avoid crushing the fresh raspberries as you fold them in.

Step 3

Spread batter evenly in the prepared cake pan using a spatula. Top the batter with chopped almonds for crunch and visual appeal.

Step 4

Bake the cake for 30–35 minutes in the preheated oven until a toothpick inserted into the center comes out clean. The cake should cool in the pan for 10 minutes after baking.

Step 5

Carefully place the cake on a wire rack to cool. Serve the cake with fresh raspberries after cooling. Slice this Raspberry Almond Cake for a guilt-free, healthy treat!
