Healthy Lasagna Soup Recipe

A family-friendly one-pot meal with ground beef, sausage, and melty cheese, lasagna soup is excellent for entertaining a crowd or cuddling up on a cool night.

INGREDIENTS

– 1 cup ricotta cheese (248g) – 1 cup shredded mozzarella (112g) – ½ cup grated Parmesan cheese (40g) – ½ pound lean ground beef (225g) – ½ pound ground Italian sausage (225g) – 2 teaspoons olive oil – 1 yellow onion chopped (323g) – 4 garlic cloves minced – 6 cups low-sodium chicken broth (1440mL) – 1 (28-ounce/794g) can diced tomatoe – 3 tablespoons tomato paste – 2 teaspoons dried basil – 1 teaspoon dried oregano – 1 teaspoon salt – ¼ teaspoon ground black pepper – ¼ teaspoon red pepper flake – 8 lasagna noodles broken into piece – Fresh basil chopped

INSTRUCTIONS

Bring the ricotta cheese, mozzarella cheese, and Parmesan cheese together in a small bowl and mix them well. Wait for it to cool down while you make the soup.

Step 1

In a big pot over medium-high heat, brown the sausage and beef. Take it out of the pot and drain off any fat.

Step 2

In the same pot, heat the oil over medium heat. After you add the onion, cook for about 5 minutes, until it's soft. After you add the garlic, wait one minute. Put the meat mix back into the pot.

Step 3

Salt, black pepper, red pepper, tomato paste, dried basil, oregano, and broth should all be added. 

Step 4

Bring up the temperature. After adding the noodles, lower the heat to medium-low and cook, stirring every now and then, for about 20 minutes, or until the noodles are soft.

Step 5

For each serving, put 3 tablespoons of the cheese mix on top and add chopped fresh basil on top of that.
