Ground Turkey Stuffed Eggplant Recipe

– 2 medium-sized eggplant – 1 lb ground turkey – 1 onion, finely chopped – 2 cloves garlic, minced – 1 bell pepper, diced – 1 teaspoon dried oregano – 1 teaspoon dried basil – 1/2 teaspoon paprika – Salt and pepper to taste – 1 cup cooked quinoa or rice – 1/2 cup grated Parmesan cheese (optional) – 2 tablespoons olive oil, divided – Fresh parsley for garnish


Heat the oven to 375°F (190°C). Cut eggplants in half lengthwise and scoop out the flesh, leaving a 1/2-inch border. Cut the scooped flesh into small pieces and reserve.

Step 1

Salt and pepper the eggplant halves on a baking sheet after brushing them with 1 tablespoon of olive oil. Bake for 15-20 minutes in the preheated oven until slightly softened.

Step 2

While the eggplants bake, heat the remaining olive oil in a large skillet over medium heat. Add chopped onion and simmer 3–4 minutes to soften. Cook 2 minutes more with minced garlic and diced bell pepper.

Step 3

Break up the ground turkey with a spoon and heat for 5-7 minutes until browned and cooked through.

Step 4

Add diced eggplant flesh, dried oregano, basil, paprika, cooked quinoa or rice, and salt and pepper to taste. Cook for 2-3 more minutes to blend flavors.

Step 5

Take the eggplant halves out of the oven and carefully ladle the turkey mixture into each half, packing it firmly. Sprinkle grated Parmesan cheese on each stuffed eggplant if desired.

Step 6

Return the stuffed eggplants to the oven for 20–25 minutes to tenderize and cook the filling. Remove from oven and top with fresh parsley. Ground Turkey Stuffed Eggplants are delicious when served hot!
