French Apple Cake Recipe

– 1 cup (120 g) all purpose flour – 1 teaspoon baking powder – ½ teaspoon salt – 2 large eggs (US), room temperature – ¾ cup (150 g) granulated sugar – 2 teaspoons (10 ml) vanilla extract – 3 tablespoons (45 ml) dark rum or 2 tablespoons (30 ml) rum extract – ½ cup (113 g) unsalted butter, melted – 4 cups peeled, cored and diced apple – 2 tablespoons (25 g) granulated sugar for topping – 2 - 3 tablespoons (15 - 23 g) powdered sugar for topping

Heat oven to 350 F (177 C). Grease and line an 8- or 9-inch springform or cake pan with parchment paper.

Melt ½ cup (113 g) butter in a small bowl, then let it cool to room temperature (approximately 15 minutes).

To ensure that the flour, baking powder, and salt are thoroughly mixed together, place them in a large bowl and whisk them together.

Whisk eggs and sugar in a large bowl until smooth. Whisk until eggs and sugar thicken and lighten to ribbon stage. Lift the whisk and let the liquid drip like ribbons.

Alternate adding ⅓ of dry ingredients and ½ of melted butter into the wet mixture. Continue until ingredients are just mixed. Incorporate sliced apple chunks.

Fill the prepared pan with the apple rum cake batter, spreading it evenly. If desired, add extra sugar on top.

Allow the cake pan to cool for 15–20 minutes. Remove the cake from the pan gently and let it cool for 10–15 minutes.
