Raspberry bars are a simple summer treat excellent for gatherings! These tasty hand-held treats are great for picnics and outdoor celebrations.
INGREDIENTS
– 1½ cups all-purpose flour (180g)– ½ teaspoon baking soda– ½ teaspoon salt– 1½ cups rolled oats (178g)– ¾ cup packed light brown sugar (165g)– ¾ cup unsalted butter softened (170g)– 1 cup seedless raspberry jam (120g)
INSTRUCTIONS
Heat the oven to 350°F. Leave a 2-inch overhang on all four edges of an 8-inch square baking pan before foiling. Add butter or nonstick cooking spray on foil.
Step 1
In a large basin, mix flour, baking soda, salt, rolled oats, and light brown sugar. Blend well.
Step 2
Using a pastry blender or fork, chop the butter into the flour mixture until it is crumbly and holds together when squeezed.
Step 3
Evenly press two-thirds of the crumb mixture into the prepared pan. Place jam evenly on top, leaving a ½-inch border on both sides.
Step 4
Scatter the remaining crumb mix over top. Gently press it into the jam. Bake for 35 minutes until crumble is golden brown and jam is bubbling.
Step 5
The bars should cool completely in the pan for about 1½ hours. Lift foil to remove from pan. Slice the block into 16 squares without foil.
