Easy Chocolate Chip Cookie Ice Cream Sandwiches Recipe

Bake soft, chewy cookies for this family favorite Chocolate Chip Cookie Ice Cream Sandwich recipe instead of buying desserts.


– 1 cup unsalted butter, softened – ¾ cup white sugar – 1 1/4 cups packed light brown sugar – 2 large eggs, cold – 2 1/2 teaspoons vanilla extract – 3 cups all-purpose flour – 1 teaspoon baking soda – 1/2 teaspoon baking powder – 1/2 teaspoon kosher salt – 1 1/2 cups semisweet chocolate chip – 3 quarts ice cream flavor of choice – Assorted sprinkles of choice


Heat the oven to 375°F. Parchment two baking sheets. Cream butter, white sugar, and brown sugar in a stand mixer basin using the paddle attachment for 2 minutes until light and fluffy.

Step 1

Beat in the vanilla essence after adding each egg. Beat in the flour, baking soda, baking powder, and salt until mixed, then the chocolate chunks.

Step 2

Place 2-tablespoon dough mounds on baking sheets at least 2 inches apart.

Step 3

Bake the cookies for 9–12 minutes, flipping the pans halfway through, until the edges are slightly crispy and the centers are barely set. 

Step 4

Let the cookies cool on the baking pans for 5 minutes before transferring them to a rack to finish cooling.

Step 5

After cooling, place half the cookies bottom-side up on your work surface. Press a second cookie on top of each scoop of ice cream to make sandwiches. 

Step 6

Sprinkle sprinkles on the ice cream sides, wrap each sandwich in plastic wrap, and freeze until solid, at least 4 hours, then serve.
