Easy Baked Asparagus Fries With Roasted Garlic Aioli Recipe

FOR THE AIOLI: – 1 head garlic – 2 teaspoons olive oil – 3/4 cup mayonnaise – 2 Tablespoons fresh lemon juice FOR THE ASPARAGUS: – 1 pound asparagus, cleaned and bottom ends trimmed – 3 large egg white – 1 1/2 Tablespoons mayonnaise – 1 1/2 cups Panko breadcrumbs, lightly crushed – 2 Tablespoons chopped flat-leaf parsley – 1/2 cup grated Parmesan cheese – Cooking spray


MAKE THE AIOLI:- Preheat oven to 400ºF. Cut one-third of the garlic head's top. Pour olive oil, salt, and pepper over the bottom of foil. To close the packet, reattach the garlic head's top and crumple the foil.

Step 1

Remove roasted garlic from oven and squeeze cloves into a medium basin. Fork-mash mayonnaise and lemon juice. Salt and pepper aioli to taste. Wrap in plastic and refrigerate until serving.

Step 2

MAKE THE ASPARAGUS:- Lower the oven to 375ºF. Parchment a baking sheet. Whisk egg whites and mayonnaise in a shallow baking dish. Mayo helps eggs stick to asparagus.

Step 3

Mix Panko breadcrumbs, chopped parsley, and Parmesan cheese in a small baking dish.

Step 4

Dip each asparagus spear in the egg mixture and then in the breadcrumbs, pressing them to the asparagus. 

Step 5

Put asparagus on the baking sheet. Repeat breading the remaining asparagus, spacing them 1 inch apart on the baking pan. 

Step 6

Bake asparagus for 15–20 minutes till golden brown and crispy following a light cooking spray. Serve the asparagus fries with roasted garlic aioli right out of the oven.
