Black Section Separator

Turtle Candy is a simple seasonal delicacy excellent for gifting, a candy tray, or snacking.

– 2 cups toasted pecan halve – ½ cup toasted chopped pecans – ½ cup salted butter – ¾ cup light brown sugar packed – ¼ cup granulated sugar – ½ cup light corn syrup – 7 ounces sweetened condensed milk – 1 teaspoon vanilla extract – 1 ½ cups milk chocolate chips – 1 teaspoon vegetable shortening

Divide the pecan halves into 30 stacks of 3–4 pecans on two parchment-lined sheet trays. Top evenly with chopped pecans and put aside.

Step 1

Slice the butter and put it to a dutch oven or medium pot with brown sugar, granulated sugar, and corn syrup. Stir continually over medium heat to a gentle boil.

Step 2

Add sweetened condensed milk and stir well. Cook until the mixture reaches 240°F, stirring regularly to avoid burning. Turn off the heat and whisk for 5 minutes to thicken.

Step 3

Mix in vanilla. Apply ½ spoonful of caramel to pecan heaps immediately. Turn to coat all pecans with caramel to stick together. Use the remaining pecans and caramel.

Step 4

Set the caramel by letting the candy sit for 30 minutes. To speed up the process, refrigerate them. Add shortening and chocolate chips to a medium bowl.

Step 5

Stir every 15 seconds in the microwave until smooth. Use a 1 teaspoon measuring spoon to spoon melted chocolate into each turtle's centre, smoothing it out.

Step 6

Use around ½-¾ teaspoon of chocolate per serving. Leave the turtles at room temperature for 2-3 hours or refrigerate the trays for 1 hour.

Step 7

It can be served immediately, or it can be stored in an airtight container between layers of parchment paper.
