A simple recipe for Slow Cooker Hawaiian Pulled Pork will take your taste buds to the tropics.
INGREDIENTS
– 1 (3.5- to 4-pound) boneless pork shoulder– 1/2 cup low sodium soy sauce– 1 1/2 cups low sodium chicken stock– 1 cup pineapple juice– 1/2 cup ketchup– 1/4 cup brown sugar– 2 Tablespoons minced garlic– 1 Tablespoon minced fresh ginger– 1 cup diced pineapple– 1 Tablespoon cornstarch
INSTRUCTIONS
Put the pork shoulder in the slow cooker with most of the fat removed.
Step 1
Mix soy sauce, chicken stock, pineapple juice, ketchup, brown sugar, garlic, and ginger in a medium bowl. Put the mixture in the slow cooker, cover, and cook on LOW for 8 hours or HIGH for 5.
Step 2
After cooking the pork shoulder to 145°F, transfer it to a chopping board and pour half of the slow cooker liquid into a medium saucepan (discard the remainder).
Step 3
Mix cornstarch and 3 tablespoons water in a small bowl. After the sauce boils, whisk in the cornstarch mixture and heat until it thickens to syrup consistency and coats the back of a spoon.
Step 4
Shred pork shoulder with two forks and place in a big bowl. Toss the pineapple and sauce together.
