Currant Oat Scones Recipe

These currant oat scones, which have a subtle sweetness, are delectable treats that are perfect for breakfast, brunch, or even a snack!  


– 1 & 3/4 cup (210g) unbleached all-purpose flour
 – 1 cup (99g) old-fashioned rolled oats
 – 2 Tbsp (25g) firmly packed light brown sugar
 – 1 tsp baking powder – 1/4 tsp salt
 – 1/2 cup (113g) unsalted butter, cold and cut into small cube – 1/2 cup (118ml) milk – 1/4 cup (59ml) honey
 – 1/2 cup (80g) dried currant – 1/4 cup (30g) chopped nuts (optional)

Warm the oven up to 400°F. Put silicone or parchment paper on the bottom of a baking sheet.   

Step 1 


Mix flour, oats, brown sugar, baking powder, and salt. Stir in the butter with a pastry blender or fork until the largest bits are the size of tiny peas.   

Step 2

Just until a dough forms, add the milk and honey and stir. Add the nuts and currants slowly and stir.   

Step 3

Drop about 1/4-cup amounts of dough onto the pan that has been made, leaving about 2 inches of space between each scone.  

Step 4

The scones should be baked for 12 to 15 minutes, or until they turn golden brown.
