Cinnamon Oat Scones Recipe

Cinnamon Oat Scones are easy to make and have a hint of sweetness from the cinnamon and oats.  

INGREDIENTS

FOR THE SCONES: – 1 & 3/4 (210g) cups all-purpose flour – 1/2 cup (45g) old-fashioned rolled oat – 3 tablespoons (38g) packed light brown sugar – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/4 teaspoon salt – 2 teaspoons ground cinnamon* – 1/2 cup (113g) unsalted butter, cold and cut into 1/2-inch cube – 1/2 cup (120ml) buttermilk – 1/2 teaspoon vanilla extract or almond extract FOR THE GLAZE: – 1/2 cup (55g) confectioners' sugar, sifted – 1 to 2 tablespoons milk

TO MAKE SCONES: Preheat oven to 400°F. Parchment a baking sheet.  

Step 1 

INSTRUCTIONS

Mix flour, oats, brown sugar, baking powder, soda, salt, and cinnamon. Mix the butter with a pastry blender or fork until the largest bits are the size of tiny peas.  

Step 2

Stir in buttermilk and vanilla or almond extract until blended. Form dough into ball and place on parchment-lined pan.   

Step 3

Pat the dough into a 7-inch disc gently. Cut into 6 wedges and space them approximately half an inch apart.  

Step 4

Bake till golden brown, 15–20 minutes. Pan-cool on wire rack.  

Step 5

MAKE GLAZE: Mix confectioners' sugar and 1 tablespoon milk. Add little amounts of milk until the glaze is the right consistency. Pour glaze over scones before serving.
