INGREDIENTS
– 3 large egg– 1/2 cup (60g) all-purpose flour– 1/2 cup milk– 2 tablespoons granulated sugar– 1 & 1/2 teaspoons ground cinnamon– 1/2 teaspoon almond extract– 1/4 teaspoon salt– 4 tablespoons (56g) unsalted butter– 1 tablespoon sliced almond– confectioners' sugar, preserves, or maple syrup, for serving
Preheat oven to 425°F. Combine eggs, flour, milk, sugar, cinnamon, almond extract, and salt in a blender. Blend smooth.

Put butter in a 10-inch cast iron skillet and bake. After the butter melts, remove the pan from the oven.
Step 2
Put the batter in the pan without stirring and return it to the oven. Bake 20 minutes without opening the oven. A golden-brown pancake should be puffy.
Step 3
Sprinkle almonds on pancakes. Turn down the oven to 300°F. Bake 5–8 minutes until golden. Add confectioners' sugar, preserves, or maple syrup and serve warm.
