Best Grasshopper Pie Recipe

Try this simple grasshopper pie at your Christmas or St. Patrick's Day party! The minty filling and chocolate pie crust will please everyone, and its green colour will blend well.

INGREDIENTS

– 24 Oreo cookie – 4 tablespoons unsalted butter melted (54g) – 4 cups marshmallows (228g) – 1½ cups heavy whipping cream divided (360mL) – 3 tablespoons crème de menthe liqueur – 2 tablespoons white crème de cacao liqueur – Green food coloring optional

INSTRUCTIONS

Spray a 9-inch pie tin lightly with cooking spray. In a food processor, pulse Oreos for 30 seconds until finely chopped. Keep 2 teaspoons of smashed cookies for garnish. 

Step 1

Add the melted butter and pulse until completely blended and finely crushed. Press the mixture into the pie pan bottom and sides. Freeze while making filling.

Step 2

Heat marshmallows and ¼ cup heavy cream in a skillet over medium heat until fully melted.

Step 3

Stir in crème de menthe, cacao, and food colouring after removing from heat. Stir occasionally until it cools to just warm, 10–15 minutes.

Step 4

Mix the remaining 1¼ cups cream in a large bowl on medium-high speed until firm peaks form, about 2 minutes after cooling. Fold marshmallow mixture and whipped cream until incorporated. 

Step 5

Spread marshmallow mixture evenly on frozen crust. Freeze until filling is firm, 2 hours or overnight. Add whipped cream and reserved Oreo crumbs or chocolate shavings before serving.
